Albert cooks a “pancake” out of noodles and dumps tuna stew on top of it.
1/2 cup peanut oil
1/2 pound fine noodles cooked, drained, and chilled
2 tablespoons butter
1 cup chopped onions
1/4 pound mushrooms sliced
3 stalks celery sliced
2 tablespoons flour
10 oz beef broth
3 tablespoons soy sauce
15 oz canned tuna
1 cup bamboo SHOOTS
Heat the oil in a large skillet. Add the noodles all at once. Fit them into the skillet to make one large pancake, and fry until lightly browned on both sides. Keep warm.
Melt the butter in a saucepan. Add the onions, mushrooms, and celery. Saute for 10 minutes. Sprinkle the flower on top, stirring well. Gradually add the broth, stirring constantly to the boiling point. Add the soy sauce, tuna fish, and bamboo sprouts. Cook over low heat for 5 minutes, stirring carefully. Season to taste.
Place the noodle pancake on a platter and pour the tuna mixture over it.
