This pancake recipe had some weirdness going in because it included cabbage and club soda, but it also had a LOT of things getting fried in butter which is rarely a bad thing. Here’s the recipe.
3 egg yolks
1 1/2 cips sifted flour
1/4 teaspoon salt
3/4 cup milk
3/4 cup club soda
3 cups finely shredded cabbage (I substituted coleslaw mix and picked out the larger carrot pieces)
Salt and pepper to taste
Butter for frying
First you mix together the batter ingredients. Then you brown down the cabbage in melted butter until it’s soft and mix it into the pancake batter. Melt more butter and spoon the pancake mix into it. You don’t want to make these pancakes too thick and the crispier the better so make sure the butter is nice and hot before beginning.
One detail that was not included in the pancake cookbook, that I found elsewhere on the internet was that for optimal results you should wait to add the club soda until JUST before cooking. I did not do this on my run.
