This clam pancake recipe is one of the weirdest ones I’ve made so far partly because MOST of the ingredients don’t seem SO far away from what I could tolerate in a pancake. And then Myra Waldo just has you throw clams in for NO REASON. For what it’s worth apparently clam pancakes are a “thing” as Googling “clam pancakes” did return several results from places that you might have previously trusted to tell you about real actual foods that you might want to make.
Here’s the recipe I used if you want to try to make clam pancakes for yourself:
1 10 oz can of minced clams
1 ½ cups sifted flour
½ teaspoon salt
1 ½ teaspoons baking powder
1 teaspoon instant minced onion
1 quarter teaspoon freshly ground black pepper
½ cup milk
2 tablespoons melted butter
Drain the clams, reserving the liquid.
Sift the flour, salt, and baking powder into a bowl.
Beat the egg, then stir in the onion, pepper, clam liquid, milk, and butter. Add to the flour mixture, beating until smooth. mix in the clams.
Drop by the heaping tablespoon onto a hot greased griddle or heavy skillet. Fry until browned on both sides. Serve with melted butter, and with a spicy sauce if desired.
Makes about 20 pancakes.
